They’ve influenced me in a way that feels so much more substantial than any other moment or event has ever touched me. My partners at Caesars Palace have given me the tools and the resources to open Amalfi, so as you can imagine my head was buried in homemade pasta and saffron scented fish broth as I brought the menu of my Italian dreams to life.
